Regina’s Hamburger Soup

This makes a LOT of soup

1-1/2 – 2 lbs Hamburger meat
Olive oil to sauté onion, garlic and celery
As much as you want GARLIC –
1 large onion – diced
2-3 stalks celery (if desired)
1 large or 2 med Idaho potato  washed and cubed – do not peel – you want those extra vitamins
1 small bag baby carrots – (if desired)
1 pkg Lipton Beefy onion soup mix
2 Bxs 32 oz Beef broth (I use 50% less sodium)
3 cns Diced tomatoes –  basil  oregano  garlic recipe
1 cn large campbells chunky vegetable soup
1 cn lima or green beans
1 cn corn
½ tsp cumin
1 tsp Italian seasoning
Water – add if you want more juice – I added 2-3 cans of water

Directions:

Saute chopped onions and garlic (and celery if desired)., add hamburger meat and brown

Add potatoes, Lipton beefy onion soup mix, beef broth, diced basil  oregano  garlic tomatoes, cumin, and Italian seasoning.   Let cook on medium heat until potatoes (and carrots if desired) are done.

Add chunky vegetable soup, Lima beans or green bean and corn.    Let heat

Serve with garlic bread or cornbread

My husband, Charles, really likes this soup.
