Grandma Hazel’s Pineapple Upside Cake

Heat oven to 350 deg Grease a cast 10″ iron skillet or a 9 x 9 x 1-3/4 pan


15 oz can crushed pineapples with juice
1/4 cup soft butter Land O Lakes (NOT margarine)
1/2 cup brown sugar
2 cups Sifted Flour
1 cup sugar, granualated
3 tsp baking powder
1 tsp salt
1/3 cup Crisco shortening
1 ea egg
1 cup milk – not fat free!
1 tsp vanilla

Mix undrained pineapple, brown sugar, butter, and spread in bottom of pan or skillet. Put in oven while it is heating up.

Sift flower, sugar, baking powder and salt, into a bowl.

Add shortening, egg, milk, vanilla.

Beat 2 min.

Pour over fruit mixture in skillet/pan.

Bake 45 min to 50 min until toothpick inserted in middle comes out clean.

Turn cake over onto a plate. Scrape out any fruit that doesn’t come out of pan and spread over cake.

Add whip cream, cool whip, or vanilla ice cream.
